Bell peppers. I used red and green bell peppers, but you can use any variety of bell peppers that are available. Red chili. Remove the seeds to tone down the spice level. If you like your fajitas spicier, you can add jalapeños, serrano peppers, or chili powder. Mushrooms. If you don’t have cremini mushrooms, use portobello or button mushrooms. Spices. Use a blend of paprika, cumin, oregano, and salt. Add garlic powder or onion powder if preferred. You can also use a pre-made fajita seasoning, just check the label to see if it’s vegan! Herbs. Use fresh coriander for a fresh, herby taste. Tortillas. I used flour tortilla, but you can substitute it with corn or chickpea tortilla to make it gluten-free. Dressing. Use dairy-free yogurt or cashew sour cream as a dressing!

Step 1:Heat olive oil in a large skillet over medium-high heat. Sauté peppers, onions and mushrooms until tender and starting to caramelize, for about 6-8 minutes. Step 2:Add chili, salt, and spices, and cook for an additional minute until fragrant. Pour in half of the lime juice and chopped coriander, and reserve. Step 3:Warm tortillas in the microwave or wrap them in foil and heat in a low oven. Step 4:Serve the wraps with sautéed peppers mixture and dairy-free yogurt, additional coriander, and lime wedges for squeezing, if desired.

⭐ Cook the vegetables in high heat to sear the edges and create a charred texture and crisp-tender vegetables.

Adjust the flavors to your taste. Add the red chili seeds for a hotter version. Keep the tortillas warm by covering them with a tea towel. Add toppings and sauces like guacamole, salsa, pico de Gallo, vegan sour cream or yogurt, shredded vegan cheese, and sliced jalapeños.

These vegan fajitas make for a quick and delicious lunch! I love pairing them with vegan refried beans and guacamole salsa to make my meal more complete. You can even swap the tortillas and make into a rice bowl to make it more filling.

Store leftover fajita filling in an airtight container in the refrigerator for 3-4 days or freeze in the freezer for 2-3 months. To reheat, thaw overnight and heat in the microwave, skillet, or oven for a few minutes until warm. Serve with warm tortillas, fresh cilantro, and dairy-free yogurt and enjoy!
