Woo hoo! Usually, this dish is served deep fried from typical restaurants. This version is lightened up and made more “real” in a few ways. First, the chicken is sautéed rather than deep fried. Second, the sauce doesn’t contain any refined sugar- just honey and fresh orange juice for sweetness. Finally, serving this on a bed of brown rice is far healthier than the refined white stuff you’d get with take-out.
All-in-all, this is a pretty darn healthy meal. And it takes SO LITTLE time to make! Because the chicken is cut into 1-inch pieces, it cooks up in only about five minutes. The sauce is simply mixed together and heated for a few minutes in the same skillet as the chicken. As long as you have cooked rice ready to go, you’ll have dinner on the table in less than twenty minutes with this recipe.
