It is perfect to cook at a high temperature and gives you a chewy texture that is present with pasta and crusts of a pizzeria pizza. For this 00 flour grilled pizza, I recommend purchasing a 00 flour product that is labeled for pizza. Sometimes it is labeled as Italian 00 Flour.
What is the difference between all purpose flour and 00 flour?
This varies on which country you are buying the flour from since it is categorized differently everywhere. In a bigger scope of explaining the concept, in the United States, 00 flour just means the durum wheat flour has been ground to a powder-like form. Hence, the two zeroes originated in Italy letting buyers know that it is a powder-like form. The gluten in the flour behaves differently than that of regular all-purpose flour. In turn, makes the elasticity of the flour different from other similar flours. The chewy and bouncy texture is the reason 00 flour is perfect for pizza, pasta, and some cakes as well. There are many ways to make pizza, so for that reason, I am not going to say you “need” 00 flour. However, if you want that thick crust with bounce and some chew, like a Neopolitan type of pizza, then I highly recommend my 00 flour grilled pizza dough. What makes 00 flour so good is the powder-like form of the flour and its low gluten level. Meaning, its ability to stretch gives it that fluffy and bouncy texture. Plus, the tiny little bubbles that form when it cooks will give you all the joy you need :). For that reason, yes you need 00 flour for pizza. Joy! This particular type of flour can be challenging to find at all grocery stores, but you can always buy it here. It is pricy compared to regular all-purpose flour, but worth it! Yup, I went there! Have you ever bought Trader Joe’s or any other readymade pizza dough? Did you notice how sticky and soft the dough was? It is made with 00 flour! So yes, Trader Joe’s sells 00 flour, but it is already pre-made pizza dough. You can find it in the refrigerated section of the store and it is the perfect substitute for my 00 flour grilled pizza. Is pre-made 00 flour pizza dough good?
You bet it is! In most cases, the shelf life is not long but that is because the yeast in the 00 flour pizza continues to rise and can cause the dough to expand or go bad. For that reason, purchase AND definitely use it within the date range versus freezing it. Consider pre-making your own dough with spices as well. Mix 00 pizzeria flour with spices and place it in a plastic bag for up to 48 hours. It will expand in size so it’s best to allow space for the dough to grow. Hence, use a larger bag or container.
Can you substitute all-purpose flour for 00 flour?
You bet! The end result will be slightly different than 00 flour, but the pizza itself still turns out great. If you want to substitute for 00 flour then I suggest using all-purpose flour. However, you will need to adjust the water and oil measurements because it is not an exact 1:1 ratio! The difference in the flour is how finely it is grounded and the gluten level which is what gives the crust that perfect chewy texture without breaking your jaw. Flour labeled 00 means it is very finely ground compared to all-purpose flour which helps bind the pizza well. 00 flour needs to be cooked at a very high temperature. So before you begin to make the pizza, you want to get the grill hot. Depending on which type of grill you are using I would suggest close to 400 degrees or higher on indirect heat. However, opening and closing the lid every three minutes can cool it down quite a bit. Once the pizza crust has cooked on one side, flip the crust over, and then top it with some sauce and your favorite toppings. Cook it for double the time than the first side and then broil until the toppings and cheese are perfectly browned.
Is grilled pizza better than baked?
Is there a such thing as “not good” pizza? I mean come on, pizza is pizza! So no, grilled pizza is not necessarily better. But I can assure you, it’s a type of pizza you want to have on your rotation when meal planning. The slight taste of a smoky grill flavor gives this pizza a “cooked on in a brick oven” taste. Cooking pizza on a grill is a lot easier than it sounds. My biggest concern was the dough will stick to the grill itself and/or it will fall through the grill. That is definitely not the case. Even when the dough is super soft, the stretched pizza dough will not fall through. Trust me, folks. It’s like magic!

Any of them! I was skeptical to make it on a charcoal grill, but it turned out great. My friend uses her gas grill and it also turns out tasty. I’ve also made it on top of a stove using a grill pan, and even that was good. Its a matter of grilling the pizza to get the grill marks on the dough + high temperature cooking that makes the pizza come out the way it does.
Can you cook pizza using an indoor grill?
How do you feel about the Big Green Egg, Vision Egg, or a Kamado Grill?
These grills have shown to make really good pizza. However, the investment for any of these particular grills would be something to consider for you and your family. We considered the Big Green Egg and use it to smoke meats. However, buying an additional stone to make pizza was not something we thought would be a good investment and prefer to use either a stove top grill pan or an outdoor grill.
Does cooked pizza need to be refrigerated?
Since pizza consists of cheese I recommend refrigerating it. Considering the micro organisms in dairy products, regardless of it being cooked or not, I would take precaution and refrigerate the pizza. Plastic bags or containers work well for storage, but I prefer foil paper so I can dual purpose it when reheating. Simply unfold and bake on the same foil paper.
How do you reheat pizza?
I recommend an oven or a convectional oven. To bring the same flavor and texture consistency back to a cold slice of pizza, an oven does a phenomenal job. You can also try reheating grilled pizza in an air fryer.
What goes with 00 flour grilled pizza?
Sides to consider with grilled pizza can include a salad, roasted broccoli/cauliflower, or my all time favorite side roasted Brussels sprouts. You can cook them on the grill while making the pizza (considering there is space on the grill). Otherwise, the oven broiler is already on, so place your choice of vegetables on the bottom rack.
