Goat Paya Curry/Mutton Trotters (Instant Pot) is infused with aromatic spices to enhance the flavors of the dish. This is an Instant Pot version. Paya Curry is nostalgic Pakistani recipe for almost every Pakistani like Chicken Biryani, Nihari, and Mutton Korma (Qorma).

TIPS
If Paya curry isn’t sticky after being cooked that’s a major sign of something has gone wrong with cooking. Ask the butcher to clean all the hairs from trotters. Trotters should be very clean meaning hairless.

HOW LONG SHOULD PAYE BE COOKED FOR?
Normally, in an Instant Pot, add the goat and ingredients and pressure it for 15 minutes. However, in this recipe, since it’s goat trotters (Mutton paye) should take 20 minutes in Instant Pot.
