I love using fresh, seasonal fruit in salsa recipes. It’s a great way to enjoy the fresh, sweet tastes of warm weather in a more savory way. This pineapple salsa is packed with yummy ingredients, including ripe fresh pineapple. In this post, I’ll show you how to tackle dicing a fresh pineapple (it’s easy! promise) and show you how easy it is to make this pineapple salsa in your food processor so it’s the PERFECT consistency- not too thin, and not too chunky. Just the right amount of stick-to-your-tortilla-chips thickness, which is the mark of a good salsa, if you ask me.
How to cut a fresh pineapple
It’s SO easy to cut up a fresh pineapple, albiet a bit sticky. Just cut the top and bottom off of the pineapple, then slice down the sides in order to take off the peel. Pineapple is unique, in that parts of the peel tend to extend deeper into the fruit, so make sure you take off a good quarter inch thickness. Then, slice the pineapple just outside the core, so you can discard it. The core is edible, but a bit tough. Now, you can dice up the pieces you sliced away from the core, and there you have it! Easy peasy. I’m a bit traditional in the kitchen so I prefer to use a knife, but if you like kitchen gadgets, these pineapple corers make easy work of this task.
How to make pineapple salsa
You guys, this is probably the easiest recipe on the whole blog. Because after you dice the pineapple, it’s smooth sailing from there. You’ll want to do a little more prep- halve the jalapeño pepper so you can remove the seeds and ribs (unless you like things super spicy), and roughly chop the onion and pepper. I also minced the garlic, since I wanted to make sure that flavor was easily distributed. Put all the ingredients in your food processor, and pulse 10-15 times. That’s it! You may need to pulse more or less depending on the consistency you’re going for.
What to serve with pineapple salsa
This recipe would be DELICIOUS served on blackened tilapia, shrimp tacos, grilled chicken, or, for a vegan option, a roasted cauliflower steak. Really, I think this is the perfect accompaniment to almost any grilled protein- the smokiness from grilling paired with the sweet, bright flavors in this salsa can’t be beat! But you can always simply serve it as a dip with your favorite tortilla chips. And if you’re feeling fancy, you could even carve a bowl out of your pineapple as a serving vessel!
