Culture Yogurt – Any store-bought plain yogurt will work well as a starter for cultured yogurt. Whole Milk – You can use any type of milk, including 2% or low-fat, but note that the taste and calorie content will vary.

TIPS TO MAKING THE PERFECT DAHI

Avoid disturbing the yogurt during its 7-8 hour fermentation period. When refrigerating, do not move the container or dip a spoon in it before storing. Always refrigerate the yogurt after it ferments. If using store-bought whole milk yogurt as a starter, brands like Kroger, Mariano’s, or Dillons work well. Using too little starter yogurt or not keeping it in a warm spot can lead to a runny texture. Warmer temperatures encourage better texture and faster fermentation. For the best texture and flavor, let the yogurt ferment for 7-8 hours in a warm place, then refrigerate. If fermented for too long, the yogurt may become sour, especially if the starter culture was sour.

Homemade dahi (yogurt) lasts up to 7-10 days in refrigerator.

HOW TO STORE DAHI?

Dahi (yogurt) is suitable for storage in the refrigerator, but freezing it is not recommended. Freezing will compromise its delightful taste and result in an excessively watery consistency, detracting from its desired texture and quality.
