Mediterranean Seven Layer Dip

I made a super quick and easy classic hummus the other day, and used it as the base for the dip. You can use homemade or store-bought hummus. This recipe could not be simpler. Just spread the hummus on the bottom of a serving dish and top with olives, roasted red peppers, cucumbers, feta cheese, tomatoes, and red onion. That’s seven layers! I also drizzled it with a bit of extra-virgin olive oil and garnished with some fresh dill because I’m an over-achiever and seven wasn’t enough for me :-)...

Mini Hasselback Potatoes With Creamy Dill Dip

I can’t get over how fun these are to eat. I love anything that can be dipped in a dip (who doesn’t?), but somehow the cut layers of these potatoes make it all the more fun. The pieces of potatoes can be pulled apart and dunked, or you can just go for it with the whole thing. And that dill sauce!! Man, is it good. I had some leftover (I don’t know how) and had it with crab cakes the next day....

Summer Farro Salad

I finally got my wish and the weather in Bristol is sizzling hot. Too hot for my Greek-born kitty, who having lived here now for almost 4 years is no longer used to relentless summer heat. It looks as though she has not managed to shed enough of her thick fur as this heatwave has caught her by complete surprise! Poor thing! I hate seeing her suffer so I’ve turned into an annoying helicopter cat mom walking after her with iced filled water bowls, which she sniffs at and walks off....

Vegan Banana Coconut Cupcakes

Today, I’m happy to present you with a plate of pretty little vegan banana coconut cupcakes…Unfortunately, getting the recipe together wasn’t as pretty and there was a lot of drama. The drama was to do with getting a structurally sound vegan frosting without the use of vegan butter or margarine because a) I’m not overly keen on them b) I cannot get them here anyway. In an attempt to make an ideal frosting, I made so many different incarnations of it that I felt like a crazy scientist sometimes – surrounded by dozen of tiny bowls filled with various concoctions and meticulously writing down the results in a notebook....

Vegan Black Forest Cake

As Greece appears to be in the stone fruit season here, today my beloved cherries (I don’t think I’ve ever met a fruit I didn’t like…actually, I still need a bit of convincing from Durian 😉 ) take the centre stage in this pretty handsome vegan black forest cake. This cake was loooong in the making! Why? As it’s tricky! Not the cake itself but making a stable vegan cream that doesn’t turn into liquid was a challenge, I’ll admit!...

Vegan Bread And Butter Pudding

You know that phrase ‘the best thing since sliced bread’ (rather unsurprisingly coined by the first industrial manufacturer of pre-sliced supermarket bread) which pronounces something a great invention…? It’s weird as I am not at all convinced that pre-sliced supermarket bread qualifies as such. It’s laden with chemicals, sticks to your teeth, has no texture and it doesn’t even taste like bread at all. On almost all counts, convenience aside, it feels like the exact opposite – a massive regression....

Vegan Char Siu Bao Sticky Pork Buns

Whenever I make any kind of dumplings, my mind wanders to my late grandma. I feel like we would really bond over our love of cooking if she was still alive today. She was a real dumpling queen and I have never ever had dumplings better than hers and that’s not just me being sentimental. I remember her best with flour all over her hands and a headscarf over her hair, kneading yet another 100 dumplings that the whole family was trying to get their hands on as soon as they were done....

Vegan Chocolate Cr Pes With Hazelnut Filling And Strawberries

For some reason, I’ve been craving crêpes big time lately. They are not the kind of food I often eat, approximately once a year is enough, but they do remind me of being a child so I get this nostalgic craving from time to time. You may remember my recent post about the wonders of aquafaba, which is my go to egg replacer. Well, I used it in these crêpes too and, once again, it passed the test with flying colours....

Vegan Polish Sweet Cheese Rolls With Berries

Happy Wednesday! And I hope you like cheesecake as I’m in a cheesecake mood these days. After my last recipe, I’ve developed a hankering for cheesecake filled buns with juicy raspberries and strawberries. I don’t normally publish sweet recipes on a Wednesday (a self-protection mechanism mainly 😉 ), but it was a craving I could not shake off. And then I realised that Duncan was heading off for a two day kayaking trip this morning so I had a perfect excuse to bake....

Vegan Ramen With Grilled Vegetables And Tofu

Even though the sun is shining as I type this and the insanely cold, northern wind has gone away for a few days, it has been pretty chilly here lately. Whole Wheat Apple Cider Doughnut Muffins

In New England, warm apple cider donuts are a tradition. A delicious, delicious tradition. With a cake-like, fluffy, melt-in-your-mouth texture, rolled directly in cinnamon sugar right after they come out of the fryer, they are simply one of the best things you could ever eat. But since I now live in Texas, I had to learn how to make something similar at home. I adapted Yankee Magazine’s recipe to make a whole wheat (yet still amazingly fluffy!...
