Miso Maple Vegan Popcorn

Yay! It’s the weekend at last! For those of you who are planning to spend their Friday night watching films or their favourite shows, I happen to have a perfect little snack. It’s easy to make and super tasty. I made a big batch of sweet’n’salty maple-miso caramel popcorn. Man, it’s sooo good. It isn’t exactly health food, but it is certainly way less unhealthy than its non-vegan equivalent. This version uses no refined sugar, coconut cream instead of a dairy cream and a bit of almond butter instead of regular butter....

Miso Mushrooms With Chickpeas And Kale

Hello and apologies for going quiet on social media and not replying to comments for a few days, but I have been caked in sanding dust and covered in paint splatters. No, I am not at some fancy art class, I wish. This is much less fun. When we decided to leave the drizzly British shores for sunny Greece several years ago, I became an accidental landlady. I loved my little flat and I was really sad to hand it away to a couple of strangers but it was that or not going to Greece, which I am totally glad we did....

Miso Roasted Brussel Sprouts With Cranberries

Ho ho ho, with Xmas just round the corner, are you guys ready? We are anything but as our lives have been in a state of constant flux lately, but things are finally falling into place. After over a month delay and many, polite at first then a little less so, phone calls to the relocation company whom we have stupidly trusted with all our possessions, we finally had our stuff delivered yesterday....

Mushroom And Cheddar Omelettes

Why is it that eggs are always reserved for breakfast? Or that when you add an egg to something, it automatically becomes brunch? Crab cakes are an appetizer or meal, but put an egg on it, and it’s OK for breakfast. But eggs are a WONDERFUL food to have at all times of the day- a high protein vegetarian option, super inexpensive, and ridiculously healthy for you. The only egg meal I usually have for dinner is baked eggs with potatoes, marinara, and spinach– a favorite in our house....

Norwegian Butter Cookies Serinakaker

If you are looking for a good Christmas cookie for this holiday season, I strongly suggest these! When this article from food52 about Norwegian butter cookies popped up on my Facebook newsfeed last week, I knew I had to make them. If you follow my blog, you know I’m part Greek- my other half is Norwegian. And yet, I haven’t posted any Norwegian recipes! So here we go. This is an EXCELLENT place to start....

Pakistani Arvi Gosht Mutton Instant Pot Two Cloves In A Pot

WHAT IS PAKISTANI ARVI GOSHT? Pakistani Arvi gosht is a curry that has Taro root with mutton (goat meat). It’s a curry that is wrapped deliciously in spices and seasoning. Drawing from my family’s experiences, I’ve seen how mixing meats with vegetables can enhance the overall taste of a recipe (such as with Aloo Matar Keema (Potatoes, Peas, and Ground Beef Curry). TO CUT THE ARVI PROPERLY? Peel the skin off and make crosses on the taro roots – one on top and the other on bottom....

Pan Fried Sea Bass With Lemon Garlic Herb Sauce

This Pan Fried Sea Bass recipe is a wonderful way to eat a mild, affordable* fish, and it’s packed with flavor from fresh oregano, thyme, and parsley. It’s especially great if you have an abundance of fresh herbs in your garden you need to use up! (raises hand) Sea bass can vary greatly in price depending on variety, location, and if it’s in season. Barramundi is a reliably affordable option and is what I used....

Peanut Butter And Strawberry Toast Recipe Simple Home Edit

Can you make Peanut Butter and Strawberry Toast ahead of time? Peanut Butter and Strawberry Toast is best made and eaten immediately, although unused sliced sourdough bread can be frozen. Freeze in an airtight container or bag for up to 2 months. The bread needs to be sliced before freezing. Toast individual serves from frozen on demand (use a butter knife to gently pry the bread apart if you find it sticks together)....

Pesto Chicken Lasagna Roll Ups

OK I’m a little late to hop on the lasagna roll-up bandwagon. As a blossoming food blogger, I really need to be more up on these trends I keep seeing on pinterest. I have yet to dive into the phenomenon of mason jar salads (Has anyone tried them? Are they worth it?) and I’m dying to try one of those magical one-pot wonder pasta dishes. So. The basic formula for lasagna roll ups is this: roll something up in cooked lasagna noodles (in this case, a chicken/pesto/ricotta mixture), place the rolls seam-side down in a baking dish with some sauce in it, cover with more sauce, top with cheese, and bake....

Smashed Potatoes With Sage Pesto

As I type this I realise that many of you are probably in the festive mood already, in preparation for Thanksgiving tomorrow. I hope your family and friend gatherings bring your souls a lot of comfort and joy, especially after another weird year of semi-isolation that we’ve just had. For us, Europeans, Thanksgiving is the point where we start vaguely pondering about the specifics of Xmas. Both occasions are an excuse to eat a lot of delicious food in good company so that’s something I can totally get behind....

Spiced Chicken And Rice With Apples And Raisins

While this recipe does take a while to bake in the oven, I love it because it takes only 10 minutes to prep and clean-up is a breeze since it uses only one pan! The warm aroma of the spices, apples, and chicken as it cooks is an excuse enough to make this recipe- eating it is an added bonus. This recipe makes a TON, and the leftovers heat up really well in the microwave, since chicken thighs are hard to overcook....

Tofu Katsu With Chilli Sauce

I admit that today’s snack is a little naughty. Cubes of firm tofu, seasoned, coated in breadcrumbs (hence the name “tofu katsu”) and shallow-fried until golden. Man, they are crispy and absolutely irresistible – especially when dipped into a bowl of sweet chilli sauce. Don’t get me wrong, I am not suggesting you should have fried tofu every day, but hey, it’s Friday, it’s been a long week and I think we all deserve a little treat....

Vegan Artichoke Pasta

Happy Wednesday everyone! I hope you are getting some glorious sunshine today – we are and I’m hoping for another mini heatwave soon as, whilst pretty, it’s quite cold at the moment – especially for the end of June. Cool temperatures have been great for my return to running though. I did my 4th run yesterday and while I still feel a bit like a running hippo, I can see an improvement in my stamina and recovery time already....

Vegan Banana Blueberry Pancakes

How weekend ready are you, guys? I am so very ready and just hoping that the weather will be tame. We are heading off to Wales this weekend to see our friends who live in Mumbles and whom we have not seen in years. Last time I saw them both was about 8 years ago when they lived in beautiful Sydney, Australia. We are looking forward to some socialising and jumping into puddles (rain is certainly on the cards) with their 3 kiddos....

Vegan Caper Pasta

I have made no secret of the fact that I’m obsessed with capers! I mean those little flower buds pickled in salty brine have the potential to brighten any vegan meal like nothing else. It’s a good job they are widely popular here in Greece, often harvested locally on the island, as I buy them by the kilo, literally! My latest caper splurge was 1.2 kg (!) and the sad thing is that I will be out of capers again in a month or so....

Vegan Chana Masala

Vegan chana masala is a perfect dish for cold winter days when you feel like something comforting yet uncomplicated. Long before I went vegan, I got invited to lunch by my Indian friend’s vegan family. I did not know what to expect as I had never knowingly had any vegan food before. I did hear that Indian cuisine had a reputation for some fantastic meatless cooking though so I wasn’t at all worried....

Vegan Gozleme With Spinach And Feta

Happy Wednesday guys! I hope your week is peachy? I’m excitedly awaiting our sideboard delivery, which is happening this Friday and cracking on with DIY in between recipe testing – what a dreamy combo… A dash of caulk in your dessert anyone? I did approximately half of the caulking last weekend, but there are a few tiny gaps that have opened up where the caulk shrunk too much and so I have to fill them again....

Vegan Pavlovas With Cranberries

I’ve been sitting on this recipe for ages but as I am married to an Aussie, I’ve decided that releasing a pavlova recipe in the run-up to Christmas is probabaly a good call. Even though we’ve known each other for 13 years now, I still have trouble wrapping my head around hot weather Christmas celebrated with a barbie on a beach, cold beers from an eski and a pavlova topped with cream and (what is to me) tropical fruit....
