Vegan Hasselback Potatoes In Herby Oil

Today’s recipe is a simple and delicious side, perfect for the upcoming Xmas festivities. It’s hasselback potatoes in garlicky and herby oil, which Duncan insists on calling Hasselhoffs 😉 . They will go perfectly with the Xmas pièce de résistance that I am planning on releasing on Friday so watch this space. These potatoes are really delicious, easy to make yet quite impressive. Their fanned tops get beautifully browned and crispy in the oven and the insides remain nice and soft....

Vegan Lasagne

This winter is kicking me hard and I guess I am not alone. The weather has been grim, it’s been raining on and on and on over here in Bristol. We’ve been thrown a few cold yet sunny days here and there, which make a massive difference to my and my cat’s mood, but these are few and far between and dark clouds and the sound of raindrops hitting our chimney have been pretty much non stop otherwise....

Vegan Potato Gratin Easy

Happy Wednesday everyone! Outside is truly miserable right now (yup, you guessed it – British speciality = rain) and as I know that some of you are probably in Thankgiving preparation mode, I decided that this calls for a super simple yet deliciously comforting dish. Vegan Raspberry Cake

Happy Sunday, I hope you are in the mood for cake as that’s what I am brining to the table today. It’s raspberry season over here and it’s one of my favourite summer fruit – for me it’s a tie between raspberries and strawberries although…who am I kidding, I love them all – so I’ve decided it’s time for a raspberry studded cake. Duncan is away kayaking this weekend and I sent him with a loaf of this cake for himself and his kayaking friends as I imagine it must be extra nice to have a cup of warm coffee and a slice of cake after hours of trashing about in the cold water....

Vegan White Chocolate Cheesecake With Rhubarb And Ginger

Happy Friday, guys! At last!! What a week, eh?!! I don’t know about you, but ours was pretty exhausting and I just need to lie down in the sun (if only the English weather would cooperate!) If you are planning a little get together with friends, a small garden party or something of the sort, I may have just the recipe for you. I’ve been thinking of doing this recipe for a while now, but I was sort of missing one crucial component for the flavours to truly sing in unison… Then I saw rhubarb at my local greengrocers et voila – I knew I was onto something gooooood....

Watermelon Salad With Queso Fresco Lime And Cilantro

This Watermelon Salad with Queso Fresco, Lime, and Cilantro is the perfect refreshing, colorful side dish for your summer festivities. The simple, fresh ingredients create the perfect balance of sweet and salty- the juicy watermelon, the salty crumbled cheese, and the tangy lime juice and zest… YUM! I could eat this all day. This is the kind of recipe that just screams summer. The watermelon is ripe and juicy and sweet and miraculously doesn’t get soggy even when you make this in advance (thanks in part to a special trick I’ll get to in a second)....
